200g lean stew meat (beef, lamb, or chicken)
1 cup chopped root vegetables (carrot, parsnip, turnip – ~150g)
½ cup chopped onion (60g)
1 garlic clove, minced
1 tsp olive oil
100ml low-sodium beef or vegetable stock
1 tsp fresh thyme or rosemary
Salt and black pepper to taste
Cheddar & Parsley Mash:
150g boiled potatoes
25g reduced-fat cheddar cheese, grated
1 tbsp fresh parsley, chopped
1 tsp unsalted butter (optional)
Black pepper, to taste

Preparation
Heat olive oil in a pan and sauté onion and garlic until soft.
Add stew meat and brown on all sides.
Add root vegetables, stock, and herbs. Simmer for 25–30 minutes until meat is tender.
For mash, boil potatoes until soft, then mash with cheddar, parsley, and butter (if using).
Serve stew hot with a portion of cheddar & parsley mash.
