2 medium courgettes (zucchini) – 250g
1 tsp olive oil
1 small garlic clove
¼ small onion (30g)
1½ cups low-sodium vegetable broth
1 tbsp low-fat Greek yogurt (optional for creaminess)
5–6 fresh basil leaves
Black pepper to taste

Heat olive oil in a pot.
Sauté onion and garlic until soft.
Add chopped courgette and cook 3–4 minutes.
Add vegetable broth and simmer 10–12 minutes until tender.
Add fresh basil leaves.
Blend until smooth and creamy.
Stir in Greek yogurt if desired.
Season with black pepper and serve warm.
