About the Recipe
Zingy Summer Salmon Salad is a vibrant, nutrient-packed dish that combines tender, flaky salmon with fresh greens and a tangy dressing. The “zingy” flavor comes from citrus elements like lemon or lime, which enhance the natural richness of the salmon.
This salad is perfect for warm weather, offering a balance of lean protein, healthy fats, and refreshing vegetables. It’s ideal for quick lunches, light dinners, or even elegant entertaining.

Ingredients
For the salad
250g new potatoes, sliced
160g French beans, trimmed
2 wild salmon fillets
80g salad leaves
4 small clementines (3 sliced, 1 juiced)
Handful of basil, chopped
Handful of coriander, chopped
For the dressing
2 tsp sesame oil
2 tsp tamari
Juice of ½ lemon
1 red chilli, deseeded and chopped
2 tbsp finely chopped onion (¼ small onion)
Preparation
STEP 1Steam the sliced potatoes and French beans in a steamer basket over a pan of boiling water for 8 minutes.
STEP 2Place the salmon fillets on top of the potatoes and beans and continue steaming for a further 6–8 minutes, or until the salmon flakes easily when tested with a fork.
STEP 3Meanwhile, prepare the dressing by mixing together the sesame oil, tamari, lemon juice, chopped red chilli, finely chopped onion, and the juice of 1 clementine.
STEP 4If serving immediately:
Divide the salad leaves between two plates.
Top with the warm potatoes, beans, and clementine slices.
Arrange the salmon fillets on top.
Scatter over the chopped basil and coriander.
Spoon the dressing over the salad.
STEP 5If preparing ahead for work:
Cook the potatoes, beans, and salmon the night before.
Pack into a rigid, airtight container, keeping the salad leaves separate.
Assemble the salad and add the dressing just before eating to prevent the leaves from wilting.
