For the salad
200g bag large cooked prawns
1 large ripe avocado, halved, peeled and sliced
200g punnet cherry tomato, halved
4 spring onions, finely sliced
1 romaine lettuce, shredded
2 tbsp olive oil
juice ½ lemon
For the dressing
3 tbsp mayonnaise
2 tbsp ketchup
juice ½ lemon
Preparation
STEP 1In a large bowl, combine the shredded lettuce, cherry tomatoes, sliced spring onions, and avocado.
STEP 2In a small bowl, whisk together the olive oil and lemon juice. Drizzle over the salad and gently toss to combine.
STEP 3In another bowl, mix the mayonnaise, ketchup, and lemon juice to make the cocktail dressing.
STEP 4Add the cooked prawns to the salad and gently mix.
STEP 5Serve the salad topped with the prawns and drizzle over the dressing, or serve the dressing on the side.
