For the salad
200g bag large cooked prawns
1 large ripe avocado, halved, peeled and sliced
200g punnet cherry tomato, halved
4 spring onions, finely sliced
1 romaine lettuce, shredded
2 tbsp olive oil
juice ½ lemon
For the dressing
3 tbsp mayonnaise
2 tbsp ketchup
juice ½ lemon
Preparation
Method
STEP 1Prepare the ingredients. Rinse the cooked prawns under cold water and pat them dry. Slice the avocado, halve the cherry tomatoes, finely slice the spring onions, and shred the romaine lettuce.
STEP 2Place the lettuce, cherry tomatoes, and spring onions in a large bowl. Add the prawns and sliced avocado on top.
STEP 3Drizzle over the olive oil and squeeze the juice of ½ lemon onto the salad. Gently toss everything together until evenly coated, taking care not to break the avocado.
STEP 4In a separate small bowl, combine the mayonnaise, ketchup, and the juice of ½ lemon. Mix well until smooth and creamy.
STEP 5Arrange the salad on serving plates or in a bowl. Spoon the dressing over the top or serve on the side.
STEP 6Serve immediately for best freshness and texture.
