About the Recipe

Pork Souvlaki with Yoghurt Dressing is a classic Greek dish that combines tender, marinated pork skewers with a cool, creamy sauce often inspired by tzatziki. It’s known for its balance of smoky, savory flavors and refreshing tanginess.
Originating from Greece, pork souvlaki is a popular street food and home-cooked favorite. “Souvlaki” simply means small pieces of meat grilled on skewers. The pork is typically marinated in olive oil, lemon juice, garlic, and herbs like oregano, giving it a bright Mediterranean flavor.
It’s usually served with warm pita bread, fresh vegetables (like tomatoes, onions, and lettuce), and a yoghurt-based dressing most commonly tzatziki. This dressing adds a cooling contrast with its creamy texture, garlic notes, and hint of cucumber and dill.
The dish is simple yet flavorful, making it a staple in Greek cuisine and a favorite for summer grilling.

Ingredients

For the salad

  • 200g bag large cooked prawns

  • 1 large ripe avocado, halved, peeled and sliced

  • 200g punnet cherry tomato, halved

  • 4 spring onions, finely sliced

  • 1 romaine lettuce, shredded

  • 2 tbsp olive oil

  • juice ½ lemon

For the dressing

  • 3 tbsp mayonnaise

  • 2 tbsp ketchup

  • juice ½ lemon

Preparation

Method

STEP 1Prepare the ingredients. Rinse the cooked prawns under cold water and pat them dry. Slice the avocado, halve the cherry tomatoes, finely slice the spring onions, and shred the romaine lettuce.

STEP 2Place the lettuce, cherry tomatoes, and spring onions in a large bowl. Add the prawns and sliced avocado on top.

STEP 3Drizzle over the olive oil and squeeze the juice of ½ lemon onto the salad. Gently toss everything together until evenly coated, taking care not to break the avocado.

STEP 4In a separate small bowl, combine the mayonnaise, ketchup, and the juice of ½ lemon. Mix well until smooth and creamy.

STEP 5Arrange the salad on serving plates or in a bowl. Spoon the dressing over the top or serve on the side.

STEP 6Serve immediately for best freshness and texture.
